This traditional Scottish dessert is made using fresh raspberries and double cream, cut through with the smoky, rich flavour of Glen Dochus. You can bring all the elements to the table and let your guests serve themselves – it’s a very sociable way to enjoy dessert. Ingredients

  • 2 tablespoons Scottish oatmeal
  • 3 tablespoons Glen Dochus
  • 350ml double cream
  • 2 tablespoons Scottish heather honey
  • 300g fresh raspberries

  1. Step 1

    Spread the Scottish oatmeal onto a large baking sheet and pop it under a medium-hot grill until it releases a deliciously nutty aroma. Remove from the grill and let the oats cool.

    Using a wooden spoon, gently crush half of the fresh raspberries and push the pulp through a sieve.

  3. Step 3

    Whisk the cream and raspberries together, gradually stirring in the Glen Dochus and heather honey.

  4. Step 4

    Stir in the toasted Scottish oatmeal and whisk the mixture to create a light, airy blend.

  5. Step 5

    Take the remaining half of the raspberries and share them between glass dessert dishes. Pour the creamy Glen Dochus and raspberry mix over each one.

    Before serving, chill your Cranachan in the fridge. Now just relax and enjoy a dram or two of Glen Dochus while you wait for your guests to arrive.
